I love that my niece gets so excited to cook with me and is so curious about the different ingredients that I use in my cooking that she isn't normally exposed to.  Through using foods that she is familiar with such as banana and strawberry muffins, I have been able to also introduce her to different  ingredients such as chia seed eggs, soy milk, and rolled oats. One of those for me is giving up my meal prep in the short term. This doesn't mean that I still don't consciously think about my nutrition as it is vital to keep this up so that you have the energy and mental capacity to focus. 
This is why i turn to certain convenient food items that may be slightly high in sodium for example then I prefer but overall still can provide the base of a good meal. 
In addition to these soups I would generally add some frozen vegetables, quinoa, and either legumes or hard tofu. 
So even if on the short term you need to make sacrifices to reach your goal, this can still done with thought and consideration into how it will impact you later.

Thai food is one of my fall back as majority of the time there are a few dishes that are either vegan or can be adapted to be vegan, contains a lot of vegetables and always has a tofu option for my protein.
