Vegan Zucchini, Sweet Potato and Lentil Patties

This Vegan Zucchini, Sweet Potato and Lentil Patty is not just a great recipe for those that are time poor, but also for the fitness health fiend, or someone who really just does not care to spend that long in the kitchen because to be honest sometimes the creative process in the kitchen can have an hour or two go by in a blink of an eye.

These delicious Vegan Zucchini, Sweet Potato and Lentil Patties has saved me in those times when I was snowed under by uni work and didn’t have time to cook something new. Instead of surrendering to two minute noodles and pizza deliveries I made these in batches and froze them so I could always have something filling and nutritious at hand when I needed it. Because I don’t know about you, but when the hunger strikes I need something quick otherwise the Hangry monster takes over, and well after that I am not liable for my actions. 

After trying these patties out once they will soon become part of your staple go-to meals for lunch, dinner or even snack items. These are a complete meal with your healthy unrefined carbohydrates provided by the sweet potatoes, your source of protein from the lentils, and omega 3 fatty acid from the flaxseeds and the avocados if you choose to make the Creamy Avocado and Lime Dressing (but how could you possibly go without this). 

There are many ways that you can dress these Vegan Zucchini, Sweet Potato and Lentil Patties up. You can have this with a nice vibrant fresh salad such as I have done in the photo, place it in a bun with some vegetables for a hearty burger, place it in a tortilla wrap, or if you want a low carb wrap then place it on lettuce leaf with some more vegetables (because you can never get enough) and drizzle some Creamy Avocado and Lime Dressing on top.

Wholesome Mains

Preparation & Cooking Time

15 minutes prep time

5-10 minutes chill time in the fridge

25-30 minutes cooking time

Zucchini, Sweet Potato and Lentil Patties


  • 3 Medium Zucchini grated, with liquid squeezed out
  • 3 cups of cooked lentils
  • 1 medium sweet potato cooked and mashed
  • 1 small onion, diced
  • 3 cloves of garlic, finely chopped or minced
  • 2 tbsp fresh coriander chopped
  • 2 tbsp fresh parsley chopped
  • 2 tbsp ground LSA or Flaxseed
  • 2 tbsp ground cumin
  • 2 tbsp smoked paprika
  • 1 tbsp onion flakes
  • Pinch of Salt and Pepper


  • 1 x food processor or grater
  • 1 x large mixing bowl
  • 1 x mixing spoons
  • 1 x measuring spoon
  • 1 x measuring cup
  • 1 x chopping board
  • 1 x knife
  • 1 x baking tray
  • plates
  • paper towels
  • baking paper


  1. Preheat the oven to 180 degrees celsius
  2. Wash the zucchini and place in food processor to mince. Alternatively, grate the zucchinis
  3. Place the processed or grated zucchini in paper towels and squeeze out the excess water  into the sink
  4. Place the zucchini into a large mixing bowl
  5. Wash the sweet potato and wrap this in paper towels before placing it on a plate. Place the sweet potato into the microwave and cook on high for 5-7 minutes until the sweet potato is soft enough to be mashed. Mash the sweet potato either with the skin on or remove this before mashing.
  6. Place the mashed sweet potato in the large mixing bowl with the zucchini
  7. Place the rest of the patty ingredients into the mixing bowl and combine thoroughly. Seasoning with salt and pepper to taste
  8. Form twelve patties from the mixture and place on a plate. Put the patties in the fridge for 5-10 minutes so that they can firm up
  9. Meanwhile, prepare the Creamy Avocado and Lime Dressing from below
  10. After the Creamy Avocado and Lime Dressing has been prepared and refrigerated, remove the Zucchini, Sweet Potato and Lentil Patties from the refrigerator.
  11. Place these on a baking tray lined with baking paper
  12. Place the patties into the oven for 25-30 minutes. Checking and flipping over at the half way mark until each side is evenly cooked and a golden brown colour
  13. Remove the patties from the oven serving it with a salad and a drizzle of Creamy Avocado and Lime Dressing similar to I have done. Or if you are looking for a bit more of a carb hit serve the Zucchini, Sweet Potato and Lentil Patties on a toasted bun accompanied with leafy green, sliced tomatoes, onions, and any other vegetables that you wish to have on your burger topped with the Creamy Avocado and Lime Dressing. Creamy Avocado and Lime Dressing


  • 1 Medium or 2 small avocados
  • 2 cloves
  • 1 lime juiced
  • 3/4 cups of water
  • 1 1/2 tbsp apple cider vinegar
  • 1 1/2 tsp maple syrup
  • pinch of pepper


  • 1 x small blender
  • 1 x measuring spoon
  • 1 x juicer
  • 1 x measuring cup
  • 1 x chopping board
  • 1 x knife


  1. Place all of the ingredients into a small blender and blend until smooth. Add in more water if you want the dressing to be thinner
  2. Pour the Avocado and Lime Dressing into a bowl and place this into the refrigerator so that the flavours combine together nicely


  • If you are not a fan of lentils this can be replaced with another type of bean such as chickpeas, black beans, kidney beans, etc
  • Add an extra crunch to these with crushed walnuts
